Blueberry Key Lime Crumb Cake

Besides book blogs, I also follow some vegan blogs.  Hey books and food go well together, right?

One of the vegan blogs I follow is called Strawberry Pepper by Eva.  Back in March she came up with a recipe for Blueberry Key Lime Crumb Cake(Click for the recipe).  I printed out the recipe and finally got around to making it yesterday.

The recipe called for vegan sour cream.  There is a vegan sour cream product on the market but I prefer to make my own.  I think it tastes more like sour cream and is much lower in fat.  Here’s how to make it:
1 12 oz. package of Mori Lite Firm Silken Tofu
1/2 teaspoon Sea Salt
3/4 teaspoon Nutritional Yeast
2 Tablespoons Fresh Lemon Juice
1 Tablespoon Brown Rice Vinegar
Blend well, scrap down the sides blend a bit more and then put in a container to chill.

For the cake, I didn’t bother chilling the 1/2 cup I needed, I just threw it in, as is.  I didn’t have a Key Lime, I’ve honestly never seen them here, so I used a regular lime.  The recipes calls for 1-2 Tablespoons and I used two.  You can’t really taste the lime in the cake, perhaps a key lime would have made a difference but I think you could substitute water if you only have a regular lime available.
I made it in a spring-form pan and the cake turned out perfect.  I cut it up and put half in the freezer, since it was for just two of us.  Bill and I ate two good size peaces with tea and I saved two more for a later date, probably tomorrow.  It was delicious!  I made the crumb topping with the pecans and the topping really makes the cake.  Try it sometime, you’ll like it too.  Be sure to let me know how it turns out.

Vegan Spinach Lasagne Casserole

Tonight for dinner I made Vegan Spinach Lasagne Casserole.  I used my regular Spinach Lasagne recipe with penne pasta instead of lasagne noodles.  It tastes the same and is much quicker to prepare because there is no layering involved.  You can do this with lasagne recipe.
Here’s the recipe:
Preheat oven to 350

about 400 grams penne, cooked

medium firm tofu, water squeezed out
frozen chopped spinach, defrosted and water squeezed out
1/2 c. Soy Co Parmesan (vegan)
1/2 cup vegan margarine, melted (I use Earth Balance)
garlic powder, salt, and pepper to taste
1 1/2 -2 cups Dayia Italian Cheese (vegan)

Crumble the tofu into a large bowl.  Mix in the remaining ingredients, including the penne, reserving about a 1/2 cup of Italian cheese for topping.  Be sure to mix well, so you get all the ingredients in each bite.  Put it all in a sprayed or oiled casserole dish and bake, uncovered for 30 minutes.  Enjoy!

Note: If I am making dinner for company, I like to use lasagne noodles and do the layering.  It does look nicer, IMO.

Hot Fudge Peanut Sundae

I didn’t get much cooking done this weekend.  Saturday we went to see Jets Over Head in concert.  They are an awesome band from here in Canada.

Check them out:

I made a vegan pizza tonight for dinner.  However, it was only after hubby and I devoured it that I realized I forgot to take a picture.  I make pizza often so I will share a photo eventually.
We had hot fudge peanut sundaes for desert and I managed to take photo of that.
To make the hot fudge:
1 large handful of semi sweet chocolate chips
1 Tablespoon of soy milk or other non-dairy milk
Put in the microwave for 45 seconds, then stir.
I used store bought vanilla soy ice cream and topped it all with Spanish peanuts.
I hope all of you had a wonderful weekend.  It ended a little too soon for me.  How about you?
