Sunday Brunch- Cornmeal Blueberry PancakesEvery time I go to Minneapolis to visit family, I go to a restaurant that makes amazing vegan cornmeal pancakes. I love them! I never thought that I could make them myself. However, when I saw Bob’s Red Mill Cornmeal, I got inspired to try to make them. I made them with blueberries, like the restaurant does. The pancakes tasted just like the restaurant’, crispy on the outside and fluffy on the inside. Now that I know Bob’s Red Mill cornmeal allows me to make my favorite pancakes, I will make them often. Thanks Bob’s Red Mill!

Here is my recipe:

11/8 cup Bob’s Red Mill Cornmeal

3 tablespoons Arrowroot Powered

2 teaspoons Aluminum-Free Baking Powder

1/2 teaspoon sea Salt

½ teaspoon Cinnamon

¾ cup Oat Milk or other vegan milk

3 1/4 tablespoons Pure Maple Syrup

1teaspoon Vanilla Extract

½ cup Blueberries or other berries (optional)

Coconut Oil for frying

Mix the dry ingredients together and set aside.  Mix the wet ingredients together and then combine with the dry.  Mix just until well combines, do not over mix.  There may be some small lumps.  If the batter is too thick, add a little more oat milk but no more than a cup total including what is in the ingredient list.  Fold in the blueberries.

Heat up a griddle or pan with a little coconut oil.  I use a non-stick pan so only use about a teaspoon of the oil.  Pour batter in pan according to the size pancakes you desire.  I used about a ¼ cup per pancake. Fry until the batter begins to dry and bubble and golden brown then flip and fry that side until golden Brown.  Serve with maple syrup or your favorite topping.

I served these with diced oven bakes hash browns and vegan bacon from PlantBase Food & Natural Products in Vancouver. They have the best vegan meat alternatives, in my opinion.

My favorite part of a meal is desert.  When I go to a restaurant, I ask to see the desert menu before I order dinner.  That way I know if I need to save room for desert.  LOL!  In fact, neither my husband, Bill nor I can eat as much as we use to.  When dining out, we often share a main dish and sometimes desert.  At home, I cook full recipes and we eat the leftovers.  We always have vegan deserts on hand, either ones I make or buy already made.  So, I am always happy to try out more desert recipes.

The Vegan Desert Box Set is two desert books.  One is vegan ice cream recipes and the other is vegan chocolate recipes.

Vegan Ice Cream Book


In the Vegan Ice Cream book, not all the recipes are actually ice cream.  It starts out with slush and shaved ice recipes, and then moves on to sorbets, and then ice cream recipes.   Some of the recipes call for an ice cream maker, which I don’t have.  I have made vegan ice cream without one using a special technique with good success so I used that with the recipes I tried.

All the fruit based sorbet recipes I tried worked fine and were quite delicious.  I made both the Lemon and Berry Sorbets. The Chocolate Sorbet was too icy but perhaps the result would have been better with an ice cream maker. I also made the Soft Serve Ice Cream that doesn’t call for an ice cream maker.  It was delicious but not very original.  There are a lot of frozen banana recipes out there. They are a vegan staple when it comes to desert and this is the first recipe I learned when I went vegan over 25 years ago.  There were some really good ideas for ice cream flavors and I look forward to trying more of the ice cream recipes.

There were also some ice Cream topping recipes like a berry sauce and hot fudge. The Peanut Butter Hot Fudge was really good.  It is rich so use sparingly.  Chocolate and peanut butter together is a favorite of mine!

Chocolate Vegan Book


The Chocolate Vegan Recipe Book is not just deserts, in fact, it starts with breakfast.  I don’t eat a big breakfast very often.  I usually just have a super-foods cereal mixed with my home made vegan yogurt and a handful of dried cranberries on top.  I follow that with a glass of my home made kombucha (a fermented healthy drink).  However, about once a month I make a brunch on the weekend for Bill and I.  Sometimes we invite friends over too.  This weekend I made the Chocolate French Toast.  French toast is my favorite comfort food and the cocoa powder and peanut butter made this French toast extra rich and flavorful.

I also made the Raspberry Hot Chocolate.  It’s been unusually cold here the last couple weeks so that really hit the spot.  I haven’t had time to make any of the cakes, cookies, etc but am looking forward to trying some of those recipes as well!

I give the Vegan Boxed Set books 4/5 stars.

Last year I bought a knife sharpener that didn’t seem to work.  I then searched around on the internet for a professional person to sharpen my best kitchen knife.  It seems that not many places sharpen knives any more.  I found a couple of places but none were conveniently located and they wanted me to leave my knife with them for several days.  I do have other knives but this is the one I use all the time.  That is one of the reasons it got dull.

One day I received an email asking if I wanted to try the Any Sharp Pro.  I wasn’t too optimistic but I figured I had nothing to lose. 

The Any Sharp Pro attaches to your counter and stays snug until you release it.  All you do to sharpen your knife is to drag it through the sharpener blades.  After the first time I dragged my knife through, I saw tiny metal shards.  I took that as a positive sign.  I put my knife through it 4 times and tried cutting a tomato.  The knife had improved dramatically.  Then I did it four more times and it became a perfectly sharp knife once again.  Just like magic and so easy!  They do say that it works with wide tooth serrated knives as well.  They require a much lighter touch.  I tried to sharpen mine but no matter how much I tried, I couldn’t get the serrated blade to go through the sharpener.

I give the Any Sharp Pro 5 out of 5 stars for straight edged knives.  Before I received it, I thought I was going to have to throw my knife away and buy a new one.  I spent $150 on the knife so, I wasn’t too pleased.  The Any Sharp Pro sells for $19-$22.  To me, it’s a no brainier, keep the knife and buy the Any Sharp Pro to save it! 

My superstitious mom has always told me never to give anyone a knife as a gift.  It’s bad luck.  However, I think the Any Sharp Pro would make the perfect gift for anyone who loves to cook!  It comes in a large variety of colors.
